Sweet Potato Crunch

3 c. mashed sweet potatoes
(use regular sweet potatoes, not canned)
1 c. sugar
1 tsp. salt
½ stick butter, melted
2 eggs, beaten
½ tsp. vanilla
½ tsp. cinnamon


Preheat oven to 350°F.

Combine above ingredients and pour into buttered baking dish.

TOPPING

1 c. light brown sugar
⅓ c. butter, melted
(measure butter after melting)
⅓ c. flour
1 c. pecans, chopped

Combine topping ingredients and sprinkle on top of potables. Bake at 350°F for 40 minutes.

YIELD: 6 to 8 servings
